History Sushi Episode 2

Sushi rose in popularity as a popular street food among the working class in Japan during the Edo period (1603–1868). Both small sushi-ya eateries and street sellers sold it. These restaurants offered straightforward, reasonably priced sushi made of vinegar rice mixed with raw fish and additional components like veggies and pickles.

The present kind of sushi is credited to have been created during this time by a man by the name of Hanaya Yohei. Tokyo’s first sushi restaurant was established by Yohei in the early 19th century. He started serving sushi made with top-notch fish that was both beautiful and artistically presented. His brand of sushi was an immediate smash, and nobles and the wealthy soon took notice.
