今日は旬の夏野菜をたっぷり使ったキーマカレーです🎵
カレールーで作るのでとっても簡単です。ぜひお試しください😊
【材料】
合いびき肉 300g
玉ねぎ 1個
にんじん 1本
トマト 2個
ニンニク 1片
カレールー 4かけ
☆トッピング
かぼちゃ お好みで
ズッキーニ お好みで
オクラ お好みで
パプリカ お好みで
目玉焼きや温泉卵 お好みで
【作り方】
1. ニンニク、玉ねぎ、にんじんをみじん切りにします。
2. トマトの皮は湯剥きをして、1cm角程度のざく切りにします。
3. フライパンにオリーブオイル、ニンニクを入れ、弱火で香りが出るまで炒めます。
4. ニンニクの香りが立ってきたら、玉ねぎ、にんじんを加えて炒めます。
5. 合いびき肉を加えて炒め、肉の色が変わってきたら、トマトを加えて炒めます。
6. 蓋をして10分煮込みます。
7. 火を止めて、カレールーを加えて溶かします。弱火でとろみがつくまで煮込みます。
8. トッピングの野菜を食べやすい大きさに切り、焼きます。オクラを使う場合、板摺りをしてから焼いてください。今回は目玉焼きも焼いて乗せました。
9. ご飯の上にキーマカレーを乗せ、お好みで焼いた旬の野菜を添えれば完成です。エンジョーイ！！
Ingredients:

1 carrot
2 tomatoes
1 clove of garlic
4 pieces of curry roux
Toppings: (as you like)
pumpkin
zucchini
okra
paprika
fried egg or soft-boiled egg
Instructions:
1. Mince the garlic, onions and carrots.
2. Peel the tomatoes skin with boiling water and cut into 1 cm square pieces.
3. Put the olive oil and garlic in a frying pan and fry over low heat until fragrant.
4. When the garlic is fragrant, add the onions and carrots and sauté.
5. Add the ground beef and pork and stir-fry. When the color of the meat changes, add tomato and stir-fry.
6. Cover and simmer for 10 minutes.
7. Turn off the heat and add curry roux and let it melt. Stew over low heat until thick.
8. Cut the vegetables for the toppings into pieces and grill them. If you are using okra, sprinkle salt and roll it on a cutting board, before you grill it. This time I also grilled the fried egg and put it on top.
9. Put keema curry on top of the rice and garnish with your choice of grilled seasonal vegetables, and you’re done. Enjoy!!
