美味しんぼ第82話「江戸の味」に登場したねぎま鍋を再現してみました
埼玉県産の深谷ねぎがなかなか売ってなくて苦労しましたが
ようやく手に入れることが出来ました
10分くらい煮るとネギがとろとろになって甘くておいしいです
ただそこまで煮るとマグロが固くなるので
しゃぶスキーのように最初に薄切りのマグロだけしゃぶしゃぶのようにしてから
ネギを加えて煮てそれから角切りのマグロを更に加える形のほうがいい気がします
I tried to recreate the Negima nabe(Green onion tsuna hot pot) that appeared in Oishinbo Episode 82 “A Taste of Edo”!
I had a hard time finding Fukaya leeks from Saitama Prefecture, but I was finally able to get them!
But I was finally able to get it!
When I simmered it for about 10 minutes, the leeks became thick and sweet and tasty!
But if you cook it that long, the tuna becomes hard.
So I cooked it like shabu shabu, only with thin slices of tuna first, and then added leeks.
I think it’s better to cook it like shabu-shabu with only thinly sliced tuna first, then add green onions, and then add more diced tuna to the shabu-shabu.
